The limited culinary residency places Grant Achatz’s Alinea inside Bellagio’s Michael Mina restaurant, extending a travelling celebration of the Chicago institution’s 20-year history.
Bellagio Resort & Casino will host Alinea, the Chicago restaurant led by Chef Grant Achatz, for a culinary residency in Las Vegas from April 16 through May 31. Bellagio will place the visiting team inside Michael Mina, one of its established dining rooms, creating a limited setting for Alinea’s 20th-anniversary tour. The residency brings a destination restaurant’s travelling format into a resort environment built around dining, hospitality and entertainment.
Achatz and his team will offer an immersive gastronomic experience alongside Bellagio’s hospitality, with the restaurant’s work framed around emotion, surprise and the relationship between food and culture. The residency is also intended to connect Alinea’s modernist approach with Las Vegas ingredients, culinary traditions and local hospitality expertise. Bellagio chefs, local chefs and area purveyors are expected to work with the visiting team on dishes shaped by the city.
The residency is scheduled for Michael Mina, located near Bellagio’s Conservatory & Botanical Gardens. Tickets were scheduled to become available on Tuesday, February 24, at 9 a.m. Pacific time through Bellagio’s booking channel, with reservations also available through the resort concierge. The programme forms the final stop of Alinea’s anniversary tour, following events in Brooklyn, Miami Beach, Beverly Hills, Tokyo and Big Sky that the company says sold out.
For Bellagio, the collaboration adds a high-profile, time-limited dining programme to a resort portfolio that includes CARBONE Riviera, Prime Steakhouse and The Mayfair Supper Club. For Alinea, the format extends its anniversary beyond the restaurant’s Chicago base and allows its team to adapt the experience to different host cities. That combination reflects the growing role of culinary residencies as a way for hospitality operators to create temporary destination experiences without opening a permanent venue.
The Las Vegas engagement therefore serves two purposes: it marks a milestone for Alinea while giving Bellagio a focused cultural and culinary proposition for a defined period. Its setting at Michael Mina, rather than a new standalone restaurant, keeps the emphasis on collaboration and temporary access.
