Innovative Dining Group says Revmo AI captured more than 5,100 after-hours calls and booked 1,208 reservations across three restaurant locations.
Innovative Dining Group (IDG), the Los Angeles-based hospitality group behind BOA Steakhouse, Sushi Roku and Katana, has deployed Revmo AI across three restaurants to handle calls and reservation workflows beyond normal operating hours. The company says the system captured more than 5,100 previously unanswered after-hours calls and booked 1,208 reservations during its first four months. The results illustrate how restaurant operators are applying conversational AI to recover booking opportunities while keeping staff focused on guests already in the dining room.
Before the deployment, nearly 43% of BOA Steakhouse’s call volume arrived outside business hours, and all of those calls went unanswered, according to the release. The accompanying case study says the group’s callers can include celebrity assistants arranging late-night VIP tables, while an existing interactive voice response system lost roughly 20% of callers before they engaged. That combination made phone coverage a narrow but consequential operational issue for the group’s upscale and fine-dining venues.
Revmo was rolled out at BOA West Hollywood, BOA Austin and Sushi Roku Palo Alto. In addition to booking reservations, the virtual agent handled 643 modifications and supported cancellations, running-late updates, special-occasion tags and cross-selling to sister restaurants when a location was full. The system integrates with SevenRooms, can recognise VIP guests by caller ID and handles voice, email, chat and SMS in 32 languages, according to Revmo and IDG’s case-study materials.
The reported performance suggests that the value of the system lies in completing transactions rather than simply answering calls. Nearly 10% of the after-hours calls converted directly into bookings, representing 479 tables, while booking volume increased 22% between the first and second halves of the measurement period. At BOA locations, Revmo said between 58% and 66% of calls were fully handled by the AI without a human answering, and the case study said every interaction was transcribed and auditable.
IDG plans to expand Revmo to additional restaurants, including a Las Vegas location with conference-driven call patterns, as well as other BOA, Sushi Roku and Katana sites. A Spanish-language agent went live at BOA Austin in February 2026, extending the group’s stated coverage at that location. For IDG, the next phase will test whether the same approach can preserve its high-touch service model while making more of the group’s inbound demand actionable across a broader restaurant network.
