Acqualina Resort & Residences has completed a renovation of Il Mulino New York, pairing a redesigned setting with a seasonal menu rooted in Italian tradition.
Acqualina Resort & Residences has completed a comprehensive renovation of Il Mulino New York, its oceanfront Italian restaurant in Sunny Isles Beach, Florida. The project refreshes the dining room, private dining areas and bar while introducing a menu that combines quarterly seasonal updates with established dishes from the restaurant’s culinary repertoire. For Acqualina, the work places one of its signature dining venues at the centre of a broader hospitality experience built around accommodation, residences and food-led leisure.
The redesigned interior reinterprets Il Mulino New York’s established identity through sand-toned walls, curated artwork and earthy green accents. Velvet quilted booths, colourful murals celebrating Italian culture, rich wood tones and neutral textures shape the dining room, while sculptural U-shaped banquettes and intimate seating arrangements are intended to support a more comfortable atmosphere. A custom mural defines the private dining room, and the reworked bar uses tilework and wood detailing as a focal point for arrivals.
The refreshed culinary programme adds a dedicated seasonal section that changes quarterly alongside a selection of classic dishes. Current seasonal offerings include Tuna Tartare with apple, celery purée and black truffle; Filet Mignon Carpaccio with Parmigiano gelato; Gamberi Rosso with mango and citron dressing; and Tonno e Salmone with avocado mousse. Entrées include Chilean Sea Bass, Dover Sole Francese, Duck with wild berry sauce, Lobster Bisque and Paccheri allo Scoglio.
The menu also retains dishes identified with Il Mulino New York, including Capellini Il Mulino, Linguine alle Vongole, Cavatelli alla Bolognese, Ravioli ai Porcini and Ossobuco with saffron risotto. Costoletta and Pollo alla Parmigiana, Half Rack of Lamb, Branzino and English Dover Sole served tableside extend the balance between recognisable fare and the newer seasonal selection. Brian Galligan, president of Il Mulino New York, said the renovation was designed to develop the experience while remaining connected to the brand’s heritage.
The restaurant’s positioning reflects how resort dining increasingly functions as both an amenity for hotel guests and a destination for local customers, although the available materials do not quantify its commercial impact. Il Mulino New York has operated at Acqualina since 2006, and the resort’s portfolio also includes Costa Grill, Ke-uH and Avra Miami. With the physical renovation complete and reservations available through the restaurant’s booking channels, Acqualina is using a familiar restaurant brand to reinforce the resort’s food and hospitality offer without abandoning its established Italian proposition.
