Dancing Goat Distillery has introduced two 10-year whiskeys under its Stillman’s Sonder label, highlighting how family heritage, overlooked barrel stocks, and patient craftsmanship can converge in modern American whiskey.
Dancing Goat Distillery has launched two new expressions under its Stillman’s Sonder label: a 10-year Bourbon and a 10-year American Single Malt. While the release introduces premium additions to the growing American whiskey market, it also centres on the story of the Maas family, whose involvement in distilling and whiskey development spans three generations. By framing the collection around the often-unseen role of the stillman, the launch shifts attention from branding toward the people and processes that shape spirits over decades.
The whiskey industry has increasingly embraced stories of heritage and craftsmanship as consumers show greater interest in how products are made and the histories behind them. Alongside established distilleries, smaller producers have found opportunities by highlighting traditional production methods, unique barrel ageing, and family expertise. This broader interest has also fuelled demand for American Single Malt whiskey, an emerging category that continues to gain recognition alongside more familiar bourbon and rye expressions.
According to Dancing Goat Distillery, the Stillman’s Sonder project originated from a collection of unused barrels produced during exploratory distillation runs at MGP in Indiana between 2010 and 2016. The Maas family acquired and carefully curated these ageing stocks before spending 18 months analysing, blending, finishing, and refining selected barrels into two finished expressions. The bourbon was matured in American and Andean oak before bottling at 94 proof, while the American Single Malt underwent multiple rounds of blending and finishing in a variety of casks, including virgin oak, ex-bourbon, Wisconsin brandy, Cognac, and Calvados barrels. Both whiskeys are being released with a suggested retail price of $70 per bottle, and the bourbon has already earned a Double Gold Medal and 98-point score at the 2026 San Francisco World Spirits Competition.
The launch also reflects a wider trend toward giving greater visibility to the craftsmanship behind whiskey production. Rather than focusing exclusively on ageing statements or tasting notes, many producers are emphasising the decisions made throughout distillation, maturation, blending, and finishing. These narratives increasingly resonate with consumers seeking products that combine technical expertise with authentic stories of place and tradition.
