Fresh Thyme Market has published its 2027 “Top 10 Trends” report with SPINS, identifying shifts in grocery flavours, ingredients, wellness priorities and meal preparation. Fresh Thyme, a Midwest-based grocer, frames the outlook around shoppers seeking foods that are innovative, convenient and supportive of long-term wellbeing. The forecast matters because it connects broad consumer interests, including fibre, protein, cognitive wellness and globally inspired eating, to the products and categories the retailer expects to feature more prominently in stores.
The forecast places nutrition alongside enjoyment rather than treating them as separate shopping missions. Its themes include “The Brain Food Era”, focused on foods and supplements associated with cognitive wellness; “Fiber First”, which links the nutrient with satiety and balanced nutrition; and “More in Every Bite”, centred on products combining protein, fibre, healthy fats and other nutrients. The report also identifies smaller indulgences as part of a balanced approach, highlighting premium snacks, mini desserts and specialty beverages.
Several predictions concern how shoppers assemble meals. “Global Flavor Mashups” points to combinations such as miso mayonnaise, gochujang barbecue sauces and chilli-mango snacks, while “Sprinkle Culture” focuses on sauces, seasonings and toppings that allow people to personalise familiar dishes. “Elevated Meal Shortcuts” covers marinated proteins, prepared vegetables, meal kits and ready-to-heat entrées, and “Fresh from the Fridge” anticipates more innovation in chilled snacks, dips, beverages and snackable produce.
The report also gives the retailer a framework for merchandising convenience and resourcefulness together. “The Resourceful Kitchen” focuses on ingredients that can extend freshness, reduce waste or work across multiple meals, while “Frozen Passport” presents the freezer aisle as a route to globally inspired food prepared at home. A bonus trend, “The Ocean Pantry”, highlights tinned seafood, seaweed, kelp-based ingredients and algae-powered products as sources of protein, omega-3s and other nutrients.
